This is comfort food at its best! Give the humble baked potato a health boost with some delicious smokey cool beans! Serves 1 Ingredients ½ pot of Smokey Cool Beans 1 baking potato sea salt Grated cheddar cheese A few fresh chives, chopped Method Preheat the oven to 180C fan. Scrub the potato and dry well, then prick in several places with a fork. Sprinkle with some sea salt and wrap it in foil. Bake directly on the oven shelf for 1-1½ hrs, until the potato feels soft when squeezed. Towards the end of the potato’s cooking time, pour half a pot of Smokey Cool Beans into a saucepan and heat over a medium heat until simmering. Unwrap the potato when done, split it open using a knife (be careful as it will be very hot!) and spoon in the beans. Sprinkle with some grated cheddar cheese and pop under the grill for a minute or two until the cheese is melted. Garnish with some chopped fresh chives and enjoy!

Serves 1 Heat 1 tbsp of olive oil in a large frying pan. When hot, add a handful of chopped slices of chorizo sausage and then fry for 2 mins until the chorizo is starting to crisp. Tip in ½ a tub of Chilli Cool Beans and simmer for 5 mins. Add a skinless chunky fillet of cod (or haddock) to the pan, leaving the top of the fillet peeking out of the sauce, then cover with a lid and leave to cook for 3-5 mins or until the flesh flakes easily. Delicious served with crusty bread!

Ingredients (feel free to add your own personal favourites): 1 tbsp coconut oil, 1 large onion halved and sliced, 2 large carrot (500g/1lb 2oz in total) cut into sugar-cube size pieces, 2 tbsp thyme chopped, 200ml red wine, 300g pot of Smokey/Chilli (for the brave) Cool Beans, 200g can chopped tomato, 2 vegetable stock cubes (reduced salt), 300g green peas, 950g sweet potato/normal potatoes (we used a mixture) peeled and cut into chunks, 25g butter, grated cheese of choice (Feta and Mozzarella for us) Heat the oil in a frying pan, then fry the onion until golden. Add the carrots and a little pinch of thyme. Pour in the wine, 150ml water and the tomatoes, then sprinkle in the stock cubes and simmer for 10 mins. Add the peas, then cover and simmer for another 10 mins until the carrots still have a bit of bite. Add the Smokey/Chilli Cool Beans for a bit of Pow! Nom! Meanwhile, boil the potatoes for 15 mins until tender, drain well, then mash with the butter and season to taste. Pile the vegetable mixture into a pie dish, spoon the mash on top, then sprinkle over the cheese and remaining thyme. Heat oven to 190C/170C fan/gas 5. Cook for 20 mins if cooking straight away, or for 40 mins from chilled, until golden and hot all the way through. Serve with broccoli or any green, leafy vegetables as you please. Ta-Daa!!
